A traditional gift to celebrate a 7th wedding anniversary is copper. Copper symbolizes prosperity and romance with a strong marriage likened to a durable metal that won’t deteriorate over time.

In keeping with tradition, I choose to gift my husband a set of copper measuring cups and spoons. Also, the best gifts are ones that you can use as well.
With the Christmas Season approaching I used this set to make some gingerdoodle cookies, a cross between gingersnap and snickerdoodle. Here is the recipe:
Gingerdoodle Cookies

- ½ cup granulated sugar, divided
- 2 teaspoons cinnamon, divided
- 2 ¼ cups all-purpose flour
- 1 tablespoon cornstarch
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 teaspoon ground ginger
- ¼ teaspoon ground cloves
- ⅛ teaspoon nutmeg
- ¾ cup unsalted butter, softened
- ¾ cup light brown sugar
- ¼ cup molasses
- 1 large egg
- 2 teaspoons vanilla extract
Instructions
1. Preheat oven to 350°F and set aside two baking sheets (I find the cookies spread better when placed directly on the pan instead of on parchment paper).
2. In a small bowl, combine 1/4 cup granulated sugar and 1 teaspoon of cinnamon. Set aside.
3. In a medium-sized bowl, whisk together the flour, cornstarch, baking soda, 1 teaspoon of cinnamon, salt, ginger, cloves, and nutmeg. Set aside.
4. In a stand mixer, cream butter, brown sugar, and 1/4 cup granulated sugar until light and fluffy, approximately 2 to 3 minutes. Add molasses, egg, and vanilla extract, mixing until well combined. Slowly add dry ingredients to wet ingredients, and mix until fully combined.
5. Use a tablespoon to scoop out dough, shape into a ball and toss to coat in the cinnamon sugar mixture. Place on cookie sheets, leaving about 2 inches for spreading. Repeat until all dough is used.
6. Minutes Bake for 10 minutes, until edges are just set. Be careful not to over bake. While warm and just out of the oven, sprinkle tops of cookies with any remaining cinnamon sugar mixture.
7. Let rest on cookie sheets for a few minutes before transferring to a wire rack to cool completely.
